Round Steak Roll-Ups (crockpot) -- e-w
Serves: 6
2 lbs. boneless beef round steak
1/2 c. grated carrot
1/3 c. chopped zucchini
1/4 c. chopped sweet red pepper
1/4 c. chopped green pepper
1/4 sliced green onions
2 T. grated Parmesan cheese
1 T. minced fresh parsley – or – 1 tsp. dried parsley flakes
1 garlic clove, minced
1/8 tsp. salt
1/4 tsp. pepper
2 T. canola
1 14-oz. jar meatless spaghetti sauce
Optional: Hot cooked spaghetti
Optional: Additional Parmesan cheese
Cut meat into 6 pieces; pound to 1/4-in. thickness. Combine vegetables, Parmesan cheese and seasonings; place 1/3 cup in the center of each piece of meat. Roll meat up around filling; secure with toothpicks.
In a large skillet, brown roll-ups in oil over medium-high heat. Transfer to a 5-qt. slow cooker, top with spaghetti sauce. Cover and cook on LOW for 6 hours or until meat is tender. Discard toothpicks. Serve roll-ups and sauce over spaghetti and sprinkle with additional Parmesan if desired.
