    SWEET CURRY CHICKEN

    Recipe Introduction

    Slow-Cooker Serves: 4
    Slow-Cooker

    1 lb. boneless skinless chicken breast, cut into strips
    1 large red or green bell pepper, cut into 1-in. strips
    1 large onion sliced and separated into rings
    1 large tomato, seeded and chopped
    1/2 c. mango chutney
    1/4 c. water
    2 T. cornstarch
    1-1/2 tsp. curry powder
    1-1/3 c. hot cooked rice

    Place the first 3 ingredients in slow-cooker. Top with tomato. Mix chutney, water, cornstarch and curry powder in a large bowl. Pour chutney mixture over chicken mixture. Cover and cook on LOW 3-1/2 to 4-1/2 hours. Serve over rice

    Nutritional Analysis: One serving equals: 326 calories (9% from fat)...3 gm fat (1 gm saturated)...28 gm protein...45 gm carbohydrate...69 mg cholesterol...73 mg sodium...3 gm fiber.
