    Slow Cooked Zesty Ginger-Tomato Chicken

    Makes 6 servings.

    12 chicken drumsticks and/or thighs, skinned (2-1/2 to 3 pounds)
    2 14-1/2-ounce cans tomatoes
    2 tablespoons quick-cooking tapioca
    1 tablespoon grated fresh ginger
    1 tablespoon snipped fresh cilantro or parsley
    4 cloves garlic, minced
    2 teaspoons brown sugar (optional)
    1/2 teaspoon crushed red pepper
    1/2 teaspoon salt

    Hot cooked brown rice (optional)


    Place chicken pieces in a 3-1/2- or 4-quart slow cooker. Drain 1 can of tomatoes; chop tomatoes from both cans. For sauce, in a medium bowl combine chopped tomatoes and the juice from 1 can, tapioca, ginger, cilantro, garlic, brown sugar (if using), crushed red pepper, and salt. Pour sauce over chicken.

    Cover and cook on low-heat setting for 6 to 7 hours or on high-heat setting for 3 to 3-1/2 hours. Skim fat from sauce. Serve chicken with sauce in shallow bowls. If desired, serve with rice.

    To lower sodium, leave out the salt.
