STRAWBERRY CREAM MOLD
Plan ahead...needs to chill several hours
Makes 6 servings.
1/2 cup water
1 package sugar-free strawberry gelatin
1/2 cup ice-cold water
2 cups low-calorie desert topping
2 egg whites, beaten
1 cup sliced fresh or frozen strawberries
Set aside 12 strawberry slices for garnish.
Boil water; stir in strawberry gelatin until dissolved. Stir in cold water. Refrigerate for about 15 minutes or until partially set.
Prepare dessert topping. Fold into gelatin until smooth. Chill for 15 minutes. Beat egg whites until stiff peaks form. Fold into strawberry gelatin mixture.
Fold remaining strawberries into gelatin mixture. Pour into ring mold. Cover and chill in refrigerator for 4 hours or until firm. Unmold onto serving plate. Garnish with reserved strawberry slices.
