1/2 cup warm water
1 T. instant coffee granules
2 packages (4-serving size) sugar-free instant vanilla pudding mix
2 cups fat-free (skim) milk
1 package (8 oz) light cream cheese, softened
1 package (3 oz) ladyfingers
2 cups frozen light whipped topping, thawed
1/2 tsp unsweetened cocoa
In a small bowl, combine the water and coffee granules; stir to dissolve the coffee. Set aside 1 T. of the mixture.
In a large bowl, beat the pudding mix and milk until thickened; stir in the larger part of the coffee mixture. Add the cream cheese and beat until smooth.
Split the ladyfinigers apart and line the bottom of an 8-inch square glass bakinig dish with half of them. Drizzle the ladyfingers with the 1 T. reserved coffee mixture. Spoon the pudding mixture evenly over the ladyfingers.
Place the remaining ladyfingers on top of the pudding and top with the whipped topping. Sprinkle with the cocoa, then cover and chill for 2-4 hours, or until ready to serve.
