SPICY SPINACH AND ARTICHOKE SPREAD

Yield: About 3 cups
- 10 ounces frozen chopped spinach, thawed and squeezed very dry
- 14-ounce can artichoke hearts, drained and finely chopped
- 8 ounces vegetable-flavored cream cheese spread
- 1/2 cup nonfat or light mayonnaise
- 1 cup shredded Monterey Jack cheese with hot peppers…OR…use plain Monterey Jack for a milder flavor)
- 1/4 cup grated Parmesan cheese
Preheat oven to 400 degrees.
Place the spinach, artichoke hearts, cream cheese, mayonnaise, and half of the Monterey Jack and Parmesan cheeses in a medium bowl and stir to mix well. Coat a 9-inch pie pan with nonstick cooking spray and spread the mixture evenly in the pan. Cover with aluminum foil and bake for 20 minutes.
Remove the foil and top with the remaining Parmesan and Monterey Jack cheeses. Bake uncovered for an additional 5 minutes.
Serve warm with low-fat tortilla chips or whole-grain crackers.
