Autumn Casserole
Serves: 8
2 15-oz. cans sweet potatoes drained
5 medium tart apples, peeled and quartered
1 T. brown sugar
1 lb. low-fat smoked turkey sausage, sliced 1-in. thick
In a 2-1/2 qt. baking dish coated with nonstick cooking spray, layer sweet potatoes and apples. Sprinkle with sugar. Top with sausage. Cover and bake at 375� for 30 minutes or until apples are tender.
