Beef with Lentils

Yield: 8 servings.
5 cups water
1-1/2 cups dry lentils, rinsed
1 pound lean ground beef
2 medium onions, chopped
2 teaspoons low-sodium beef bouillon granules
1 to 2 garlic cloves, minced
2 tablespoons uncooked long grain rice
1 teaspoon sugar
1 teaspoon ground cumin
1/2 teaspoon pepper
1 tablespoon vinegar
In a saucepan, bring water to a boil. Add lentils. Reduce heat; cover and simmer for 20 minutes. Meanwhile, in a skillet over medium heat, cook beef and onions until meat is no longer pink; drain.
Drain lentils, reserving 2-3 cups liquid. Dissolve bouillon in reserved liquid; add to beef mixture. Stir in lentils, garlic and rice. Cover and simmer for 10 minutes.
Add sugar, cumin, and pepper. Bring to a boil; reduce heat. Cover and simmer for 15 minutes or until lentils and rice are tender and the liquid is absorbed. Stir in vinegar.
One serving equals: 237 calories, 46 mg sodium, 21 mg cholesterol, 26 gm carbohydrate, 21 gm protein, 6 gm fat.
