Tuna Noodle Casserole -- w
Serves: 4
7 oz. uncooked elbow macaroni
2 T. stick margarine
3/4 c. chopped onion
1/2 c. thinly sliced celery
1/2 c. finely chopped red bell pepper
2 T. flour
1/4 tsp. salt
1/8 tsp. white pepper
1-1/2 c. 2% milk
1 6-oz. can albacore tuna in water, drained
1/2 c. grated Parmesan cheese, ‘divided’
Optional: Fresh Dill sprigs
Preheat oven to 375º. Spray 8-in. square baking dish with cooking spray. Cook macaroni according to package directions (omitting the salt) until al dente. Drain and set aside.
Meanwhile, melt margarine in large deep skillet over medium heat. Add onion; cook and stir 3 minutes. Add celery and bell pepper; cook and stir 3 minutes. Sprinkle flour. Salt and white pepper over vegetables; cook and stir 1 minute. Gradually stir in milk; cook and stir until thickened. Remove from heat.
Add macaroni, tuna and 1/4 c. cheese to skillet; stir until pasta is well coated. Pour tuna mixture into prepared dish; sprinkle evenly with remaining cheese. Bake, uncovered, 20-25 minutes or until hot and bubbly. Garnish with dill if desired.
