CRISPY FISH FILLETS

- 1 pound flounder or sole fillets
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
- 2 tablespoons olive oil
- 1/3 cup finely crushed cereal flakes
- 1 lemon, sliced
- Parsley sprigs
Preheat oven to 500 degrees F. Coat a baking dish with non-stick cooking spray. Rinse fish and pat dry. Season with salt and pepper, then dip in oil. Coat each fillet with crumbs and arrange in prepared baking dish. Bake 10 minutes, until fish turns translucent to opaque. Garnish with lemon slices and parsley sprigs.
