Fiery Catfish w/ Yogurt

Cook: 16 minutes
1-1/2 pounds skinless catfish fillets (tilapia, snapper, cod, or perch)
2 tablespoons olive oil
1 medium onion, thinly sliced
2-3 jalapeno peppers, stemmed, seeded and minced
2 tablespoons minced fresh ginger
1 teaspoon minced or pressed garlic
1 teaspoon ground coriander
1/2 cup plain yogurt
1/4 cup sliced almonds
1/4 cup raisins
Preheat oven to 450F. Rinse catfish and pat dry. With a sharp knife trim white or grayish fat from skin side and edges of each fillet.
Lay fish in a shallow baking pan, overlapping thin sections. Brush with 1 tablespoon oil. In a large frying pan, heat remaining oil and cook onion, peppers, ginger and garlic until onion is limp, 4-5 minutes; stir in coriander.
Sprinkle onion mixture evenly over fish and bake, uncovered until fish is opaque through enter, 10-12 minutes. Garnish with yogurt, almonds and raisins.
