Yield: 4 servings
- 1 pound firm white fish fillets
- 1 tablespoon margarine
- 1 cup chopped peeled apples
- 1/3 cup raisins
- 1/4 cup chopped pecans or walnuts
- 4 teaspoons brown sugar
- 1/2 teaspoon cinnamon
- 1 tablespoon all-purpose flour
- 1 cup apple juice
Preheat oven to 425 degrees F. Spray a baking dish with nonstick vegetable spray. Place fish in single layer in baking dish.
In nonstick skillet, melt margarine; saute apples raisins, pecans, sugar and cinnamon for 3 minutes or until apples are tender.
Mix flour with apple juice until dissolved; add to pan and cook until thickened, stirring constantly, 2 to 3 minutes.
Pour sauce over and bake for approximately 15 minutes or until fish flakes easily when tested with a fork.
