Recipe Introduction
This recipe can be served for dessert, breakfast or a snack. Simply core apples, fill with a mixture of brown sugar, lemon, nuts and raisins, top with maple syrup and bake.
Yield: 4 Servings
4 large tart apples (such as Gravenstein, Granny Smith or Rome), cored
1/4 cup fresh lemon juice
1/4 cup brown sugar
1/4 cup chopped walnuts or pecans (optional)
1/4cup currants or raisins
1/4 cup maple syrup
Cinnamon (about 1/4 teaspoon)
Nutmeg (slightly less than the cinnamon)
Preheat the oven to 350 degrees. Place the cored apples in an 8-inch glass baking pan.
In a small bowl, combine the lemon juice, brown sugar, walnuts or pecans (if desired), and currants or raisins. Mix well.
Divide the mixture into four equal parts and stuff into the cored apples. If you have extra, just sprinkle the remaining filling on top. Pour the syrup over the apples. Dust the apples with cinnamon and a smaller amount of nutmeg. Bake in the oven, uncovered, for 1 hour.
