Recipe Introduction
Applewood chips soaked in water and sprinkled over hot coals are a wonderful flavoring agent for pork. Vary the intensity of flavor with the amount of wood chips used.
Fresh Fruit and Pork Kabobs

1/2 cup plum jam
1/4 cup cider vinegar
1/2 teaspoon ginger
3/4 pound pork tenderloins, trimmed of fat, cut into 1-inch
cubes
1 apple, cored, cut into 1-inch-thick slices
2 plums, pitted, cut into 1-inch-thick slices
4 (12-inch) metal skewers
2 cups applewood chips, soaked in water, drained*
In small bowl, combine jam, vinegar and ginger. Add pork pieces; stir to coat with marinade. Let stand at room temperature for 10 minutes.
Heat grill. Oil grill rack. Remove pork from marinade; reserve marinade. Thread pork, apples and plums alternately on skewers. Place wood chips and a small amount of water in foil pan and place on lava rocks in a gas grill, or spread wood chips over hot coals in a charcoal grill.
When ready to grill, place kabobs on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium-high coals. Cook 10 to 15 minutes or until pork is no longer pink, turning occasionally and brushing frequently with marinade.
BROILER DIRECTIONS:
Prepare kabobs as directed above. Heat broiler. Oil broiler pan. Omit applewood chips. Place kabobs on oiled pan. Broil 4 to 6 inches from heat for 10 to 15 minutes or until pork is no longer pink, turning occasionally and brushing
frequently with marinade.
TIP: * Applewood chips can be purchased wherever grills are sold and at some supermarkets and kitchen specialty stores.
