    Apple Cider Sundae Topping

    Diabetic Exchanges
    Yield: about 2 cups

    1-1/2 c. apple cider
    1/3 c. sugar or Splenda Granular to lower carbohydrates & calories
    2 T. cornstarch
    1/2 tsp. lemon juice
    1/2 tsp. cinnamon
    1-1/2 c. finely chopped peeled tart apples.

    In a saucepan combine the first 5 ingredients, stir until smooth. Add apples. Bring to a boil and stir for 2 minutes. Remove from heat; cool slightly. Serve over ice cream.

    One 2-tablespoon serving of topping equals: 37 calories…1 mg sodium…0 cholesterol…9 gm carbohydrate…trace protein…trace fat ++++ Exchanges: 1/2 fruit
