Chocolate Sorbet

Servings: 5 to 6, makes 2 1/2 to 3 cups
1/2 cup sugar, or a little more to taste
1 1/4 cups unsweetened cocoa
2 cups warm water
1/3 cup port
Mix the sugar and cocoa together in a bowl. Whisk in the water, a little at a time, until smooth. Add the Port.
Process the sorbet in an ice cream maker according to the manufacturer's instructions. If not using it immediately, freeze the sorbet and then process for a few seconds in a food processor to soften before serving.
