    Creamy Frozen Apricot Bars

    Recipe Introduction

    Plan ahead...needs to freeze at least 2 hours. Creamy Frozen Apricot Bars
    Yield: 16 servings.

    1 cup vanilla fat-free yogurt
    1/2 cup apricot spreadable fruit
    1 (8-ounce) package light cream cheese (Neufchâtel) -- cubed

    Line square pan, 8 × 8 × 2 inches, with plastic wrap. Place all ingredients in blender or food processor. Cover and blend on high speed, stopping occasionally to scrape sides, until smooth. Carefully spread in pan. Cover and freeze about 2 hours or until firm.

    Remove frozen mixture from pan, using plastic wrap to lift. Cut into 4 squares; make 2 crisscross cuts in each square to form 4 triangles.

    Per Serving: 68 Calories; 3g Fat (44.1% calories from fat); 2g Protein; 7g Carbohydrate; 0g Dietary Fiber; 11mg Cholesterol; 66mg Sodium. ++++ Exchanges: 1/2 Fruit; 1/2 Fat
