    Yield: about 1 quart
    Plan ahead…needs to freeze at least a total of 5 hours.

    1 pkg. (3 oz.) lime gelatin
    1 c. boiling water
    3 c. 1% milk
    1/4 c. lemon juice

    In a bowl, dissolve gelatin in boiling water. Add milk, sugar and lemon juice; stir until sugar is dissolved. Pour into a freezer container; freeze for 4 hours or until frozen. Remove from freezer and let stand for 10 minutes or until slightly softened. Beat with a mixer until light and fluffy. Refreeze for at least 1 hour.

    One 1-cup serving equals: 260 calories…2 gm fat (1 gm saturated)…11 mg cholesterol…156 mg sodium…54 gm carbohydrate…trace fiber…9 gm protein ++++ Exchanges: 2 starch…1-1/2 fruit
