    Pineapple Coconut Sherbet

    Serves: 8

    2 cans (8-oz., each) unsweetened crushed pineapple in Own Juice, drained
    2 c. nonfat vanilla yogurt
    1/2 c. unsweetened shredded coconut...(available in Health-Food stores)
    2 T. honey

    Combine all ingredients and mix well. Pour into shallow pan; freeze until partially set. Transfer to a bowl; beat 4 minutes. Pour into a container with cover; freeze until solid. Soften at room temperature about 15 minutes before serving.

    One serving equals: 116 calories….2 gm fat (1 gm saturated).…54 mg sodium….2 gm protein….22 gm carbohydrate….1 mg cholesterol.…trace fiber ++++ WWP: 3
