Meatballs
YIELD: 4 servings
1 lb. extra-lean ground beef (92 percent lean)
1/4 C. white rice
1/4 C. green pepper
1/4 onion
2 C. canned tomatoes (tomatoes and juice)
Mix all ingredients and make meatballs. Put in deep pan and cover with juice and crushed tomatoes. Bake at 350 degrees for about 1 hour. Serve with veggies and boiled potatoes. The juice from this dish is the gravy for the potatoes.
