Popeye’s Favorite Meatballs

Egg substitute equivalent to 1 egg
1 T. water
1 c. low-fat cottage cheese
1/4 c. dry bread crumbs
2 T. dried minced onion
1/2 tsp. garlic powder
1 pkg. (10 oz.) frozen chopped spinach, thawed and well drained
1-1/2 lbs. lean ground beef
In a bowl combine the first 6 ingredients. Add spinach and beef; mix well. Shape into 1-in. balls. Place on an ungreased baking sheet. Broil 4-6-in from heat for 8 minutes. Turn and broil 3-5 minutes longer or until meat is no longer pink.
