Tomato Meat Loaf

Egg substitute equivalent to 1 large egg
1/2 c. fat-free milk
1/4 c. ketchup
1 c. quick-cooking oats
1 slice white bread, crumbled
4 saltines, crushed
1/2 tsp. salt-free seasoning
1/4 tsp. pepper
2 lbs. lean ground beef
1 medium tomato, sliced
In a large bowl, combine the first 8 ingredients. Crumble beef over mixture and mix well. Shape into a loaf in a greased 13-in. x 9-in. x 2-in. baking pan. Bake, uncovered at 350º for 1 hour.
Arrange tomato slices over loaf. Bake 30 minutes longer or until meat is no longer pink and a meat thermometer reads 160º. Using 2 large spatulas, carefully transfer meat loaf to a serving platter.
