Chocolate Cream Cheese Delight

Crust
3/4 cup low-fat graham cracker crumbs
2 tbsp. melted unsalted butter or margarine
Filling
1 envelope unflavored gelatin
1/4 cup skim milk, well chilled
3/4 cup skim milk, boiling
4 ounces light cream cheese, softened
4 ounces nonfat cream cheese, softened
1/2 cup nonfat sour cream
1/2 cup nonfat cottage cheese
2/3 cup sugar
1 tbsp vanilla
5 tbsp unsweetened cocoa powder (regular or Dutch process)
Preheat oven to 350. Lightly coat a 9" springform pan or pie plate with no-stick spray.
Crust: In a small bowl, combine graham cracker crumbs and butter. Press into the prepared pan and bake for 5 minutes. Cool on a rack.
Filling: In a blender, sprinkle gelatin over cold milk. Let stand 2 minutes. Add hot milk and blend on low speed for 2 minutes. Add remaining ingredients. Blend on high speed for several minutes, until smooth.
Pour filling into baked crust and chill for about 4 hours, or until firm.
