    Coconut-Orange Chess Pie

    Recipe Introduction

    To reduce carbohydrates...replace part of the sugar with Splenda Exchanges
    Yield: 10 servings.

    1 cup sugar
    1-1/2 teaspoons all-purpose flour
    1-1/2 teaspoons yellow cornmeal
    Egg substitute equivalent to 2 eggs
    1 egg -- beaten
    1/4 cup margarine -- melted
    1/4 cup orange juice, frozen concentrate -- thawed, undiluted
    2 tablespoons water
    1/4 cup coconut flakes
    1 pie crust (9 inch) -- unbaked

    Combine sugar, flour, and corn meal, mixing well. Combine egg substitute, egg and next 3 ingredients; add to sugar mixture, stirring well. Add coconut; pour into pie crust. Bake at 350 degrees F. for 35 minutes or until filling is set.

    Per Serving: 241 Calories; 11g Fat (41.9% calories from fat); 3g Protein; 32g Carbohydrate; 1g Dietary Fiber; 26mg Cholesterol; 185mg Sodium. +++++ Exchanges: 1/2 Grain(Starch); 2 Fat; 1-1/2 Other Carbohydrates.
