    Enlightened Apple Cream Pie -- e-w
    Plan ahead…needs to refrigerate 1 hour before serving.
    Serves: 8

    Butter-Flavored nonstick cooking spray
    2 c. thinly sliced, tart apples, unpeeled
    2 T. sugar
    2 T. lemon juice
    1 pkg. (8 oz.) low-fat cream cheese, softened
    1-1/4 c. skim milk. ‘divided’
    1 3-1/2 oz sugar-free instant vanilla pudding mix
    1 tsp. grated lemon peel
    1 reduced-fat pastry pie shell (9-in.), baked and cooled
    1/4 c. no-sugar-added apricot preserves, melted

    Spray skillet with cooking spray. Cook apples, sugar and lemon juice over medium heat until apples are tender, about 5 minutes. Cool.

    Beat cream cheese until smooth. Gradually beat in 1 c. milk, pudding mix and lemon peel. Add remaining 1/4 c. milk; beat until thick, about 1 minute. Mound filling into pie shell. Arrange apples over filling. Brush apple with preserves. Refrigerate 1 hour before serving.

    One slice equals: 263 calories…10 gm fat (4 gm saturated)…36 gm carbohydrate…17 mg cholesterol…2 gm fiber…6 gm protein…410 mg sodium +++EXC: 1 starch…1-1/2 fruit…2 fat +++WWP: 6
