    JERKED PORK WITH NECTARINE-DRIED CHERRY SALSA

    Yield: 4 servings

    - 1 pound pork tenderloin
    - 1 tablespoon jerk seasoning
    - 2 medium nectarines, finely chopped
    - 1/2 cup dried cherries or cranberries
    - 2 teaspoons orange zest
    - 1/4 cup orange juice
    - 1 teaspoon grated gingerroot
    - 1 jalapeno pepper, seeded and finely chopped...or...1/4 teaspoon dried red pepper flakes

    Preheat oven to 425 degrees F.

    Place pork on a nonstick baking sheet. Sprinkle evenly with jerk seasoning. Bake 22-24 minutes or until lightly pink in the center. Meanwhile, in a medium mixing bowl, combine remaining ingredients.

    Place pork on cutting board and let stand 5 minutes before thinly slicing. Serve with salsa.
