    Lemon & Garlic Roast Pork – 12
    Serves: 12

    1 (3 lb.) Lean boneless pork loin roast
    3/4 tsp. grated lemon rind
    3 garlic cloves, minced
    1 can low-sodium chicken broth

    Trim fat from roast. Combine lemon rind and garlic; rub evenly over roast; place in casserole dish or baking pan; add broth. Cover and bake at 400-F for 30 minutes. Turn pork over and bake, covered an additional 20 minutes. Uncover and bake 15 minutes more. Discard broth and serve.

    One serving equals: 166 calories…6 gm fat (2 gm saturated)…68 mg sodium…24 gm protein…o.5 gm carbohydrate…66 mg cholesterol…0.5 gm fiber +++WWP:4
