Savory Pork Chop and Italian Rice
Yield: 4 Servings
16 oz pork center loin; 1/2" -thick, trimmed of fat
1/3 c green bell pepper; chopped
1/3 c onion; chopped
1/4 c celery; chopped
1 2/3 c water
1/4 ts dried Italian seasoning
1/8 ts pepper
1 (8 oz.) can tomato sauce
1 c rice, parboiled; uncooked
Spray medium nonstick skillet with nonstick cooking spray. Brown pork chops over medium-high heat. Remove pork chops from skillet. Add bell pepper, onion and celery to skillet; cook and stir until crisp-tender. Add remaining ingredients except rice and pork chops; bring to a boil. Stir in rice; top with pork chops. Cover; simmer 20 to 25 minutes or until rice is cooked and pork chops are tender.
