Cheesy Mashed Potatoes
Serves: 6
3 c. prepared mashed potatoes
2 T. thinly sliced green onions
1/3 c. skim milk
1/4 tsp. white pepper
1/8 tsp. ground nutmeg
2 oz. (1/2 c.) shredded Edam cheese…OR…reduced-fat cheese of your choice, ‘divided’
In a large bowl, combine first 5 ingredients and 1/4 c. cheese; mix well. Lightly spoon into a 1-1/2 qt. casserole dish or 8-in. square baking dish sprayed with nonstick cooking spray. Sprinkle with remaining cheese. Bake, uncovered, at 400-F for 15-20 minutes or until potatoes are heated through and cheese is melted.
