    Parsleyed Red Potatoes -- e-w

    Mr. Food’s Quick & Easy Diabetic Cooking
    Parsleyed Red Potatoes
    Serves: 6

    2 qts. Water
    1 medium onion, quartered
    2 lbs. (about 18) small red new potatoes, washed
    1/4 c. (1/2 stick) margarine
    2 garlic cloves, minced
    1/4 c. chopped fresh parsley

    In large saucepan or soup pot, combine onion and water. Bring to a boil over high heat. Peel 1 strip from center of each potato. Place potatoes in pot. Cover and cook for 15-18 minutes or just until fork tender. Drain well and keep warm. Melt margarine in same pot. Add garlic, sauté 1-2 minutes or until tender. Stir in parsley. Return potato mixture to pot; toss to coat. Serve immediately.

    One serving (3 potatoes) serves: 201 calories (69 from fat)…8 gm fat (0.5 saturated)…0.5 mg cholesterol…91 mg sodium…30 gm carbohydrate…4 gm fiber…4 gm protein ++++ Exchanges: 2 starch…1 fat +++WWP:4
