    Serves: 4

    4 (3 oz.) boneless skinless chicken breasts
    1/2 c. fat-free Catalina salad dressing
    1/2 pkg. onion soup mix
    1/2 c. water packed apricots

    Place chicken breasts in a pan coated with nonstick cooking spray. Mix salad dressing and soup mix together. In a blender, blend apricots until smooth. Add apricots to salad dressing mixture.

    Pour sauce over chicken, reserving some
    for basting. Bake uncovered at 350-F for 1 hour, basting every 20 minutes.

    One serving equals: 183 calories....3 gm fat (1 gm saturated)....326 mg sodium....27 gm protein....8 gm carbohydrate....73 mg cholesterol.....1 gm fiber ++++ Exchanges: 1/2 starch....4 oz. very lean meat
