    NOTE: You can use garlic powder, onion powder, dried parsley flakes in place of the fresh ingredients. Yield: 4 servings

    1/8 tsp black pepper
    1/8 tsp salt
    4 chicken breasts, boned, skinless (5 ounces each)
    1 Tbsp olive oil
    1/2 C Marsala wine
    1/2 C fat-free, reduced-sodium chicken broth
    1 tablespoon lemon juice
    1/2 c. sliced fresh mushrooms
    1 onion, chopped
    2 cloves of garlic, chopped
    1 Tbsp fresh parsley, chopped

    Cut chicken into smaller pieces. Sprinkle with salt and pepper (and the garlic and onion powder if using it).

    In a heavy-bottomed skillet, heat oil. Place chicken breasts in skillet and brown on both sides. Then remove chicken from skillet and set aside.

    To the skillet, add wine and stir until the wine is heated. Add juice, stock, and mushrooms, onion and garlic. Stir to blend; reduce heat, and cook for about 10 minutes until the sauce is partially reduced.

    Return browned chicken breasts to skillet. Spoon sauce over the chicken. Cover and cook for about 5-10 minutes or until chicken is done. Serve sauce over chicken. Garnish with chopped parsley.
