    Nicole’s Mediterranean Chicken -- e-w
    Serves: 4

    2 T. olive oil
    1 lb. boneless skinless chicken breast, cut into 1-inch chunks
    1 tsp. dried bail
    1 garlic clove, minced
    1/2 small onion, diced
    1/2 small green bell pepper, diced
    1/2 small red bell pepper, diced
    1/3 c. dry white wine
    1 14-1/2-oz. can diced tomatoes
    1/4 c. sliced pimiento-stuffed green olives
    1/4 tsp. black pepper

    In a large skillet, heat the oil over medium heat. Add the chicken and basil to the skillet and brown the chicken, stirring frequently. Add remaining ingredients and cook, uncovered, for 20 minutes or until vegetables are tender and no pink remains in the chicken and the juices run clear.

    One 1-cup serving equals: 240 calories…10 gm fat (2 gm saturated)…68 mg cholesterol…455 mg sodium…8 gm carbohydrate…2 gm fiber…27 gm protein +++EXC: 3 very lean meat…2 vegetable…1-1/2 fat +++WWP: 5
