Orange Mint Chicken -- w
Serves: 6
1 c. sugar-free orange marmalade
2 T. lemon juice
2 tsp. dried mint leaves
6 5-oz. boneless, skinless chicken breasts
In a small saucepan, combine the first 3 ingredients. Cook over low heat until glaze if well heated.
Place chicken on a shallow baking pan sprayed with nonstick cooking spray. Broil unglazed chicken breasts for 8 minutes on each side. Brush glaze over both sides of chicken and continue for 15 minutes longer, turning once. Brush glaze over chicken breasts several times during the least few minutes.
