    Roast Turkey Breast w/Spinach-Blue Cheese Stuffing - 14 -- e-w
    Serves: 14

    1 frozen whole boneless turkey breast (3-1/2 to 4 lbs.), thawed

    1 10-oz. pkg. frozen chopped spinach, thawed and squeezed dry
    2 oz. blue cheese – or – feta cheese
    2 oz. reduced-fat cream cheese
    1/2 c. finely chopped green onions
    1 T. + 1-1/2 tsp. dried basil leaves
    1 T. + 1-1/2 tsp. Dijon mustard
    2 tsp. dried oregano leaves

    Optional: Black pepper & paprika

    Preheat oven to 350º. Coat roasting pan and rack with nonstick cooking spray.

    Unroll turkey breast; rinse and pat dry. Pound between 2 sheets of plastic wrap or waxed paper to 1-in. thickness using flat side of meat mallet or rolling pin. Remove and discard skin from one-half of turkey breast; turn meat over so sink side down (on other half) faces down.

    Combine the next 7 ingredients in medium bowl; mix well. Spread evenly over turkey breast. Roll up turkey so skin is on top. Tie closed with kitchen string.

    Carefully place turkey breast on rack; sprinkle with pepper and paprika, if desired. Roast 1-1/2 hours or until no longer pink in center of breast or 170º on meat thermometer. Remove from oven; let stand 10 minutes before removing skin and slicing. Cut into 14 (1/4-in.) slices to serve.
