    Turkey Breast w/Apricot Glaze – 12 -- e-w

    Turkey Breast w/Apricot Glaze – 12 -- e-w
    Serves: 12

    1 small onion
    2 whole cloves
    1 small orange, halved
    1 bone-in turkey breast (4-1/2 lbs)
    1 c. apricot preserves
    1/2 c. unsweetened apple juce
    1 tsp. Dijon Mustard

    Peel onion and insert cloves. Stuff onion and orange into the neck cavity of turkey, Place a rack in a shallow roasting pan. Bake, uncovered, at 325º for 2 to 2-1/2 hours or until a meat thermometer reads 170º. Let stand for 10-15 minutes before slicing.

    Meanwhile in a saucepan, combine preserves, apple juice and mustard. Bring to a boil. Reduce heat; simmer, uncovered, for 4-5 minutes or until slightly thickened. Remove skin, onion and orange from turkey. Slice turkey. Drizzle with glaze.

    4 oz. of turkey with 4 tsp. glaze equals: 228 calories…1 gm fat (trace fat)…97 mg cholesterol…82 mg sodium…18 gm carbohydrate…trace fiber…35 g, protein +++EXC: 1-1/2 fruit +++WWP: 5
