    Chocolate Custard -- w
    Plan ahead…needs to refrigerate for 4 hours
    Serves: 6

    1 7-gm envelope unflavored gelatin
    1/4 c. cold water

    3 c. 1% milk
    1/2 c. sugar
    4 oz. semisweet chocolate, finely chopped
    1/4 c. cocoa powder
    Pinch of salt

    In a small bowl, sprinkle gelatin over cold water. Whisk with a fork and let stand 5 minutes. In a medium pan on medium heat, combine the milk and sugar, whisking together until sugar dissolves. Whisk in chocolate, cocoa and salt. Whisk continually
    until chocolate melts. Remove from heat and whisk gelatin mixture into chocolate, mixing well. Strain mixture into a bowl. and divide among six 6-oz. dishes or coffee cups. Cover each with plastic wrap and refrigerate for 4 hours.

    One serving equals: 440 calories…61 gm protein…37 carbohydrate…1 gm fiber…7 gm fat (4 gm saturated)…235 mg sodium…5 mg cholesterol +++WWP: 9
