Citrus Pumpkin Pudding -- e
Yield: 8 servings
- 1 package (3.9 ounces) instant lemon, or orange, pudding and pie filling
- 1 cup light lemon, or orange yogurt
- 1 cup canned pumpkin
- 1 tablespoon grated lemon, or orange, rind
- 1 teaspoon pumpkin pie spice
- 1 cup light whipped topping
- Light whipped topping, as garnish
- Chopped pecans or walnuts, as garnish
Beat pudding and pie filling and lemon yogurt in medium bowl on low speed 1 minute. Beat in pumpkin, lemon rind, and pumpkin pie spice; fold in 1 cup light whipped topping.
Spoon into serving bowl or 8 individual dishes.
At serving time, top with dollops of light whipped topping and sprinkle with pecans.
