    Custard: Old Fashioned Egg Custard

    Old Fashioned Egg Custard

    Serves 8

    1 cup of skim milk
    1/4 cup of sugar
    2 teaspoons of vanilla extract
    10 egg whiles
    1/4 cup of mashed potatoes
    1/4 cup of mashed banana
    2 teaspoons of ground cinnamon
    1 teaspoon of grated nutmeg
    1/2 teaspoon of ground cloves
    One 9 inch Reduced Fat Pie Shell or your favorite.

    Preheat your oven to 375ºF.
    Heat the skim milk and sugar in a medium saucepan until warm, stirring constantly. Set aside.

    Using an electric mixer, mix the vanilla extract, egg whites, banana, cinnamon, nutmeg, and cloves for about 3 minutes or until fluffy. Add the lukewarm sugar & milk mixture to the beaten egg whites.

    Pour into the pie shell and bake for about 1 hour or until the custard is firm.

    One serving (1/8th of pie) equals: Calories 170; Sodium 250 mg; Protein 8 g; Cholesterol 1 mg; Fat 2 g; Carbohydrate 29g
