Pudding `N` Bananas

Makes 4 servings.
1/3 c sugar
2 T cornstarch
2 c 1% lowfat milk
1 large egg
1 t vanilla
4 ripe medium bananas
8 gingersnap cookies, crushed
Whisk sugar and cornstarch in a medium saucepan to combine. Slowly whisk in milk until well blended; whisk in egg. Bring to a boil over medium heat. Boil, whisking to keep milk from sticking to pan, 2 minutes or until thickened. Remove pudding from heat and stir in vanilla until blended.
Pour into a small metal bowl; cover surface of pudding directly with plastic wrap (to keep a skin from forming). Refrigerate about an hour or until cold.
To serve:
Peel and slice bananas. Spoon alternating layers of pudding, bananas and gingersnaps into 1-cups capacity parfait or dessert glasses.
