    Friut: Cool Radiatore Melon Salad

    Recipe Introduction

    This salad is also great with the addition of 2 cups diced cooked chicken & This recipe is even quicker if you buy pre-cut melon. Serves: 6

    1 lb Radiatore, Medium Shells or other medium pasta shape, uncooked
    1/3 med Honeydew, cut into 1/2-inch chunks (about 2 1/2 cups)
    1/2 med Cantaloupe, cut into 1/2-inch chunks (about 2 cups)
    1 med Cucumber, peeled, seeded and cut into 1/2-inch chunks
    1/2 cup Limeade concentrate
    2 tbsp Vegetable oil
    1 tsp Chili powder
    1/8 tsp Salt

    Prepare pasta according to package directions; Omit Added Salt.

    While pasta is cooking, toss the honeydew, cantaloupe and cucumber together in a large bowl. In a small mixing bowl, whisk together the limeade concentrate, oil, chili powder and salt. Add the dressing to the fruit mixture.

    When pasta is done, drain and rinse under cold water; drain again. Toss pasta with fruit and dressing and serve.

    One serving equals: 310 Calories...7 g Protein...59 g Carbohydrates...6 g fat...0 mg Cholesterol...75 mg Sodium...Calories from Fat 16%
