Marinated Black Bean Salad
Plan ahead...needs to marinate for 30 minutes.

8 servings-3/4 cup each
2 (16-ounce) cans black beans, drained well 1 red pepper, seeded and diced
1 yellow pepper, seeded and diced
1 small red onion, diced
Dressing:
1/2 teaspoon salt
1/4 cup red wine vinegar
1/4 teaspoon minced garlic
1/4 teaspoon ground cumin
1 teaspoon hot pepper sauce
1 tablespoon olive oil
2 tablespoons prune juice, grape juice, or apple juice
1. Combine drained beans with diced vegetables in a large salad bowl.
2. Mix ingredients for the dressing together in a shaker container and blend. Pour dressing over beans. Stir and refrigerate at least 30 minutes to allow flavors to blend.
One 3/4 cup serving equals: 183 calories…. 2 gm. Fat… 8 gm. Protein… 34 gm. Carbohydrate… 0 cholesterol… 73 mg. sodium. ++++ Exchanges: 2 starch…1 vegetable.
