Skinny Waldorf Salad -- e-w
Plan ahead…needs to refrigerate for at least 1 hour.
Serves: 4
2 c. chopped cored Red Delicious apples
1 c. chopped celery
1 c. cubed cooked boneless skinless chicken breast
1/4 c. chopped green onions
3 T. lemon nonfat yogurt
2 tsp. fat-free mayonnaise
1 tsp. toasted poppy seeds
1/8 tsp. salt
Dash pepper
Combine the first 4 ingredients in a large bowl; set aside. For dressing: Combine the remaining ingredients in a small bowl. Pour over apple mixture; toss to coat. Refrigerate at least 1 hour to allow flavors to blend.
