    Creamy Cucumber Salad

    Diabetic Low-Fat & No-Fat Meals in Minutes – M. J. Smith, R.D.

    Serves: 8

    2 medium cucumbers, peeled and sliced thin
    1 tsp. dill weed
    1/4 tsp. salt
    1/4 tsp. pepper
    Sugar substitute equivalent to 1 T. sugar
    2 T. red wine vinegar
    2 green onions, diced
    1 c. nonfat sour cream
    8 cherry tomatoes, sliced in half

    In a large salad bowl, combine all ingredients except tomatoes. Stir to blend, then cover and refrigerate at least 4 hours. Add tomatoes just before serving.

    One 3/4-cup serving equals: 55 calories…0 fat…3 gm protein…12 gm carbohydrate…0 cholesterol…48 gm sodium ++++ Exchanges: 2 vegetables
