    Cucumber and Raisin Salad

    Cucumber and Raisin Salad

    8 servings

    2 large cucumbers
    1 medium onion, finely chopped
    1 cup golden raisins

    Dressing
    1 cup nonfat plain yogurt
    1/8 teaspoon salt
    1/4 teaspoon freshly ground pepper
    1/2 teaspoon dried mint or 3 tablespoons chopped fresh mint
    1/2 teaspoon dried basil or 1 tablespoon chopped fresh basil

    Combine cucumber, onion and raisins in a large salad bowl.

    In a small mixing bowl, combine ingredients for the dressing. Pour dressing over salad ingredients, and toss to mix. Serve on the side with any traditional Italian dish.

    One 3/4 cup serving equals: 95 calories...1 g fat...3 g. protein...22 g carbohydrates...1 mg cholesterol...85mg sodium
