Easter Grass Slaw

6 c. coleslaw mix
2 large carrots
1 medium sweet yellow pepper, chopped
1 large apple, chopped
3 green onions, sliced
1/2 c. celery
1 c. fat-free mayonnaise
1/2 c. sugar
2 T. cider vinegar
1/4 tsp. salt
1/4 tsp. pepper
In a large bowl, combine the first 6 ingredients. In a small bowl combine remaining ingredients. Pour over cabbage mixture and toss to coat. Cover and refrigerate until serving.
