Spinach Grapefruit Salad -- e-w
Serves: 4
1 10-oz. pkg. baby spinach leaves, washed and stems removed
4 oz. sliced white mushrooms
1 c. grapefruit, peeled, sectioned and chopped
Dressing:
2 T. canola oil
2 T. apple cider vinegar
1-1/2 tsp. poppy seeds
1 tsp. Splenda Granular
Place spinach, mushrooms and grapefruit sections in a large salad bowl.
Whisk together the dressing ingredients in small salad bowl until emulsified. Pour dressing over salad and toss well.
