SPINACH AND MUSHROOM SALAD - e-w

Yield: 4 servings
- 6 cups fresh spinach leaves
- 1 cup sliced fresh mushrooms
- 2 slices red or sweet white onion, separated into rings
- 1/4 cup shredded carrot
- 2 hard-boiled eggs, chopped
- 2 slices turkey bacon, cooked, drained, and crumbled
- 1/4 cup shredded nonfat or reduced-fat cheddar cheese
- 1/2 cup Buttermilk-Herb Dressing…OR…light ranch dressing
Combine the spinach, mushrooms, onion, and carrot in a large bowl and toss to mix. Place a quarter of the salad mixture on each of 4 salad plates and top each salad with some of the eggs, bacon, and cheese. Serve immediately accompanied by the dressing.
