Caramelized Onion & Fennel Relish -- w
Makes about 4 cups
4 tsp. olive oil
2 medium red onions (about 1-1/2 lbs.), thinly sliced (about 6 cups)
1 medium fennel bulb (about 2 lbs.), trimmed, cut into quarters and thinly sliced (about8 cups)
2 tsp. sugar
3/4 tsp. salt
1/4 tsp. pepper
In deep nonstick 12-in. skillet or 5 qt. saucepan, heat oil over medium heat. Add all ingredients; cover and cook 15 minutes, stirring occasionally. Remove cover and cook 10 to 15 minutes longer or until vegetables are tender and deep golden brown; stirring frequently.
