Baked Cheesy Triangles - e-w
Yield: 4 servings
- 8 slices bread, with crusts removed
- 1 cup low-fat cheddar cheese, grated
- 2 tablespoons freshly chopped parsley
- 1 medium egg, beaten
- 2/3 cup low-fat milk
- Good pinch of Herbs de Provence
- Coarse black pepper
Preheat the oven to 350º. Cover 4 of the slices of bread with the cheese and the parsley, then place the remaining slices of bread on top.
Cut each sandwich into 4 triangles and place in a shallow, lightly greased ovenproof dish. Whisk the egg and the milk together with the herbs and pepper.
Pour the egg and herb mixture over the sandwiches and bake in the oven for 15 minutes until golden brown.
